Thanksgiving 2026 is Thursday, November 26. That sounds far away until it is the Monday before and you are standing in a grocery aisle wondering how many potatoes twelve people eat.
Here is the good news: almost all the planning can happen in one evening at the kitchen table. Give yourself about two hours, work through the five steps below, and you will have a menu, a grocery list, a cook timeline and a hosting checklist. After that, Thanksgiving week is just following the plan.

Before you start: what you need
- A pen and paper, or my printable Thanksgiving Dinner Planner
- Your calendar for Thanksgiving week
- The recipes you already know you want to make
- A rough guest list, even if a few people have not answered yet
Step 1: Set the guest count and the menu
Start with the number of people, then build a menu that is generous but realistic. A classic Thanksgiving menu has one main, four or five sides, bread, one or two desserts and drinks. That is plenty. Every extra dish adds shopping, oven time and dishes to wash.
| Course | Pick | Make-ahead? |
|---|---|---|
| Main | Roast turkey (or a turkey breast for small groups) | Thaw ahead; roast on the day |
| Starch | Mashed potatoes | Yes, the day before; reheat |
| Stuffing | Stuffing baked in a dish | Assemble the day before |
| Vegetable | Green bean casserole or roasted vegetables | Assemble the day before |
| Sweet side | Sweet potato casserole | Yes, the day before |
| Sauce | Cranberry sauce and gravy | Cranberry up to 3 days ahead |
| Bread | Dinner rolls | Buy or bake ahead |
| Dessert | Pumpkin pie and one more pie | Yes, the day before |
How much turkey? The USDA suggests about 1 pound of whole turkey per person. If you love leftovers, round up. For 12 guests, a 12 to 14 pound bird is a comfortable fit.

Go through each recipe and write every ingredient under a store section. Then check your pantry and cross off what you already have. Splitting the list into two trips helps: shelf-stable items the weekend before, fresh items two or three days before.
| Section | Typical items |
|---|---|
| Meat | Turkey, bacon or sausage for stuffing |
| Produce | Potatoes, sweet potatoes, onions, celery, green beans, fresh herbs, cranberries, lemons |
| Dairy | Butter (more than you think), milk, heavy cream, eggs, sour cream |
| Bakery | Dinner rolls, bread cubes for stuffing, pie crusts |
| Pantry | Broth, flour, sugar, brown sugar, canned pumpkin, evaporated milk, spices, fried onions, marshmallows |
| Drinks | Cider, sparkling water, coffee, tea |
| Extras | Foil, roasting pan, food thermometer, storage containers, paper towels, ice |
Step 3: Make your turkey and cook timeline
Work backward from the time you want to eat. The two numbers that matter are thaw time and roast time. These come from the USDA's turkey roasting guide:
| Turkey size (unstuffed) | Fridge thaw time | Roast time at 325°F |
|---|---|---|
| 12 to 14 lb | About 3 days | 3 to 3¾ hours |
| 14 to 18 lb | About 4 days | 3¾ to 4¼ hours |
| 18 to 20 lb | About 5 days | 4¼ to 4½ hours |
| 20 to 24 lb | About 5 to 6 days | 4½ to 5 hours |
Roast times are approximate. A whole turkey is safe at 165°F in the thickest part of the thigh, wing and breast, so use a food thermometer. Let it stand about 20 minutes before carving, which is when the sides go into the oven.
Thanksgiving week timeline
| When | What to do |
|---|---|
| Weekend before (Nov 21-22) | Shop the shelf-stable list. Start thawing a 16 to 20 lb frozen turkey in the fridge by Sunday. |
| Monday, Nov 23 | Make cranberry sauce. Check you have enough chairs, plates and serving dishes. |
| Tuesday, Nov 24 | Shop the fresh list. Chop onions and celery. Start thawing a 12 to 14 lb turkey if you have not yet. |
| Wednesday, Nov 25 | Bake pies. Make mashed potatoes. Assemble stuffing and casseroles. Set the table and print place cards. |
| Thursday, Nov 26 | Roast the turkey and follow the day-of schedule below. |
Day-of schedule for a 4 p.m. dinner (14 to 18 lb turkey)
| Time | Task |
|---|---|
| 10:30 a.m. | Take the turkey out of the fridge, remove giblets, heat the oven to 325°F |
| 11:00 a.m. | Turkey in the oven |
| 1:00 p.m. | Take casseroles out of the fridge; set out drinks and snacks |
| 2:45 p.m. | Start checking the turkey's temperature |
| 3:15 p.m. | Turkey out at 165°F; tent with foil and let it stand |
| 3:15-3:45 p.m. | Stuffing and casseroles in the oven; reheat potatoes; make gravy; warm rolls |
| 3:45 p.m. | Carve the turkey |
| 4:00 p.m. | Dinner is served |
Step 4: Your hosting checklist
- Seats and table: enough chairs, a tablecloth, napkins, place cards
- Serving: a platter for the turkey, a serving spoon for every dish, a gravy boat, a carving knife
- Oven plan: list which dish goes in when, so nothing fights for space
- Fridge space: clear a shelf on Tuesday for the turkey and make-ahead dishes
- Drinks and ice: a cooler for drinks frees up fridge space
- Dietary needs: ask guests about allergies and label dishes
- Leftovers: containers ready so food goes in the fridge within 2 hours
- Fun: a game, a playlist, or thankful cards for everyone to fill in
Step 5: Hand out jobs
When guests ask "What can I bring?", have an answer ready. Give each person one specific job: rolls, a pie, a bag of ice, drinks, or doing the dishes. Write the names next to the dishes on your menu, and Thanksgiving becomes a team effort instead of a one-person show.
Friendsgiving tips
- Go potluck, with a plan. You make the turkey (or a turkey breast); assign everything else by category so you do not end up with five desserts.
- Keep it small and cozy. A turkey breast or a roast chicken is perfect for six to eight friends.
- Use a shared list. One message thread or note with the menu and who brings what.
- Mix and match dishes. Nobody minds unmatched plates; it adds to the charm.
- Start a tradition. Thankful cards, a group photo or a pie contest makes it feel like an event.
- Send leftovers home. Ask everyone to bring a container.

Frequently asked questions
When is Thanksgiving 2026?
Thanksgiving 2026 is Thursday, November 26, 2026.
How far ahead should I plan Thanksgiving dinner?
Plan the menu and grocery list two to three weeks ahead, shop shelf-stable items the weekend before, and start thawing a frozen turkey in the fridge about 24 hours for every 4 to 5 pounds.
How long does a turkey take to cook?
At 325°F, an unstuffed 12 to 14 pound turkey takes about 3 to 3¾ hours and a 14 to 18 pound turkey about 3¾ to 4¼ hours, according to the USDA. Always check that it reaches 165°F with a food thermometer.
How much turkey do I need per person?
The USDA suggests about 1 pound of whole turkey per person. Round up if you want leftovers.
What can I make ahead for Thanksgiving?
Cranberry sauce (up to three days ahead), pies, mashed potatoes, and assembled casseroles and stuffing (the day before) all make Thanksgiving Day much calmer.
How do I host Friendsgiving?
Make the main dish yourself, assign everything else by category so dishes do not repeat, keep a shared list of who brings what, and ask guests to bring a container for leftovers.
